Pav bhaji

I am here with the recipe of India's most famous street food. I cook for my kids and needless to say this is my daughters favourite snack. Only the dishes relished by my kids make it to my blog :)
I served it with the fresh homemade pav buns, the recipe of which I will be blogging soon.




Ingredients:
Potatoes -2
Carrots-2
French beans-6 to 7
Cauliflower florets-1 cup
Green peas-1/2 cup
Onions-2 medium sized, finely chopped
Tomatoes- 2 medium sized, finely chopped
Capsicum-1 finely chopped
Green chillies-3
Ginger-1/2", crushed
Garlic-6 cloves, crushed
Oil- 1 tbsp
Butter-1 tbsp
Pav bhaji masala -2 tbsp , I used Everest brand
Red chilli powder-1/2 tsp
Turmeric-1/4 tsp
Sugar -1/2 tsp
Salt
Juice of half lemon

Method:

  • Boil peeled and cubed potatoes, carrots, beans and cauliflower in a pressure cooker for two whistles, drain water, mash and keep it aside. Do not discard the stock we will be using it later
  • Boil green peas separately
  • Take oil and butter in a wok, add onions and slit chillies and sauté till onions turn translucent. Add ginger and garlic sauté till raw smell disappears. Add capsicum and sauté for a minute
  • Add turmeric, salt, red chilli powder and pav bhaji masala and sauté. Add tomatoes and cook till soft and mushy, add sugar
  • Add the mashed vegetables and peas and add the vegetable stock and cook well for 10 minutes, add more water if you find it thick. Stir in the lemon juice
  • Serve with toasted pavs, chopped onions and a slice of lemon
